The above Buttercreams are American Buttercreams. They can all be made using the French, Italian or Swiss method upon request.

What’s the difference between American, Italian, Swiss and French Buttercreams?

American Buttercream: Sweeter than the over-the-seas varieties, authentic American Buttercream incorporates real butter, icing sugar, vanilla (bean) and/or other flavorings.

Italian Meringue Buttercream: Sweeter than Swiss and French but not as sweet as American, hot sugar syrup is poured over eggs and uses real butter. The final mixture ends up being airy and great for piping and decorating cakes.

Swiss Meringue Buttercream: Similar to Italian and just a touch lighter.

French Meringue Buttercream: Uses egg yolks and butter with no egg whites. French Buttercream is the richest of all of these, but it doesn’t work well for piping on cakes. Instead, it’s best used as a filling between layers or spreading on the outside with or without fondant. Also note that because of the egg yolks, it has a yellow color.
